Rainbow Cakes!

So friday had the honor of being Ed's birthday. So I baked him some awesome rainbow cupcakes. 

These are totally easy to make aswell, they taste so much better than normal cupcakes, this is my sworn by recipe, it's from Nigella Lawson's How To Be A Domestic Goddess and they are called Burnt Butter Brown Sugar Cupcakes. Mmm don't they sound yummy already?


YOU WILL NEED

150g Butter, for melting. 
125g Brown Sugar (use cane sugar as it will mix a lot easier)
2 Eggs
200g Flour
Vanilla Essence
4 contrasting colours of food colouring (I used yellow, green, blue and red!)


1. weigh out the butter and put in the saucepan to melt. 
2. mix together the flour and butter. 
3. mix the eggs into the mixture to form a dough. 
4. Add the melted butter to the mix and stir continuously to form a good cake consistency. 
5. Flavour with vanilla essence. 
6. Divide the cake mixture into four seperate bowls. Add one food coloring to each bowl . 
7. Spoon a bit of each colour into each paper case to create some crazy looking cakes (I think they look a bit like play dough!?)
8. Bake at 200 degrees celcius or gas mark 6 for about 15-20 minutes! Then let them cool to ice. They look so much cooler now right!?

9. Wait for them to cool, a good couple of hours should do it, and then make your icing! Beat butter and icing sugar together strongly until you have a creamy consistency to taste, a bit of milk helps to get the mixture started aswell! When you have enough icing, spoon it onto the cakes and add some sprinkles. You are done! :)
